Elderberry Gummies!

For several years, I have been using Elderberries to give our immune system a boost it needs during the winter months when Vitamin D is at an all time low in our house and that everyone is cooped up inside for long periods of time.

I made many things with elderberry, but making gummies is by far my favorite way to get them into my (and my kids) system.

Elderberry (Sambucus nigra) have been used for centuries medicinally to boost the immune system, shorten the duration of colds/flu, to aid in digestion, and to help respiratory function.

On the homestead, I grow cultivated elderberry which I love (the berries are bigger and its easy to harvest).  However, I am a forager at heart, so I always forage for native/wild elderberry each year.  They flower in spring- which you can use the flowers for tea too!  The berries ripen in mid to late August in my zone 5.  I check every day around that time to make sure that I can get some berries before my competition (birds) get to them.  I never clean out an entire bush- always leaving plenty for wildlife.

After I gather a basket or two, I remove the berries from the stems.  A trick I use is to take a fork and ‘comb’ the berries off.  You want to leave the berries intact as best as possible.  Next I dehydrate them slowly on the lowest heat setting.  I do not want to remove any of the medicinal properties by using too much heat.  Once completely dry, I store them in a glass jar with a lid.  They stay for several years, but I usually use them up in a year or so.

To make the gummies you only need a few ingredients and a few kitchen items to make this happen.

You’ll need:

  • Glass measuring cup
  • 1/4 cup dried elderberries (you could use fresh too)
  • 1 Cup boiling Water
  • Small saucepan
  • Juice from 1 small organic lemon
  • 3 Tsp Raw, local honey (or substitute any other sweetener)
  • 3 Tbsp Gelatin (I use beef gelatin powder)
  • Silicone molds

To start, add 1 cup of boiling (filtered) water to 1/4 cup of dried elderberries.  Let these steep for about 20 to 30 minutes.  Strain the berries, squeezing out as much of the ‘juice’ as you can.  You should now have a little over a cup of elderberry tea.  Pour the tea, honey and lemon into the saucepan, stir and bring to a low simmer.  Add the gelatin and stir to dissolve the gelatin.  Once the liquid becomes slightly thicker, remove from heat.  At this point you could add a drop or two of essential oils for added health benefits- but that is optional.  Carefully pour the elderberry sauce into the molds and refrigerate until set.  I then pop them out and store them in an airtight, glass container.  Keep refrigerated for up to a week.  Makes about 20 gummies (depending on the size of your molds).

Wood Butter

With colder weather approaching, I always like to give my wood furniture and wooden utensils a quick rub down with some lovin’ before we crank up the wood stoves.  This magic stuff is also called wood butter, wood conditioner, non toxic wood finish, wood cream or eco-friendly polish.  Anyway, the reason I like to use this is because its non toxic, easy to make and use, provides some waterproofing, food safe, safe for kids and pets, no harmful chemicals and it is good for the wood.

I like to do this twice a year, once in the fall before it gets dry in our house from constant heat from the stove and then again in the spring- just to make everything clean, shiny and hydrated again.

I decided to share this because while my husband and I were building our new farm table, we knew that we weren’t going to use some harsh chemicals or anything that would harm us when we ate off of it.  When I posted some photos of the table,  I was surprised by how many emails I got asking for my recipe/method because its so hard to find furniture polish that isn’t toxin filled. So, here is what we did and how we did it!

With only few ingredients- its so simple anyone can make it.  I make a big batch and use a wide mouth pint jar to make it easy to scoop out.  If I have left over, I just put a lid on it and keep it under the sink for later use.  I try to use it up after 6 months or so.  If you are planning on keeping it longer- you can add a few drops of vitamin e oil to the mixture to help it stay shelf stable a little longer.

Here are a few things you will need:

(This is for a small batch of butter, I usually double it.)

  • A glass canning jar (preferably one with a wide mouth- easy to scoop out the butter)
  • 1 oz. Beeswax
  • 3 oz. Coconut Oil
  • A wooden skewer or wooden spoon (for stirring)
  • A saucepan and water for a water bath.
  • 2 to 3 drops of Lemon Essential Oil.
  • *Optional, vitamin e oil.

Heat the beeswax in the jar that is placed inside the saucepan filled half way with water.  Bring the water to a simmer (never a boil) and slowly heat the beeswax.  It takes a while to melt beeswax, but once it is melted, add the coconut oil and stir together.  Once both are melted and combined, I remove from the saucepan, stir in the essential oil (at this point you could also add the vitamin e oil) and let cool.

Now you can use this on your wooden spoons, antique wood furniture, wooden bowls, wood tables, and the kids wooden toys.  Just take a little butter and rub into the wood.  Allow the wood to absorb the butter for a few hours or overnight and the buff to a shiny sheen with a clean cloth.  I like to let the kids give their wood toys a good cleaning.  They like to help and it teaches them to treat their things respectfully.

This would make an awesome gift too!
